Then there is one axis left which I confirmed the the Saitek manual… the Z axis, which is for the rudder control. So I try to set up the RUDDER AXIS with the JOYSTICK R AXIS Z. The problem is the rudder does not start off centered. I can press the right pedal all the way and the bar moves all the way to the right.

This works fine as long as you only ever push down one pedal at a time, if you step on both the rudder will jump left and right to whichever pedal provided the last input.

WebGo to controls, Make sure you have the Uh 1H Huey Sim Selected, click axis assign at the bottom. Find the entry on the left for Pedal Left/Right then go to the throttle column and click the entry. Then you should just be able to push the pedals and it will detect. Let me know if that doesn't work. If you have the axis to assign it to try pushing your brake all the way down, then click to assign and release the brake and push it back in to assign.
